When a user clicks on a button in my app the background of the button highlights in the phones accent colour for as only as the user holds it down. Is it possible to remove this, so that when the user clicks the button they do not see their accent colour it should just be transparent on click.

I know this is an old request but thought it might be at least useful to other people.
The pressed state of the button is defined into the button template, visual state manager, pressed state. This link shows the default button template that you can use to create a customized template that does not apply a brush in the pressed state.

As #Raymond Chen mentioned, an easier way is to put the Button inside a Border so that the Button will be a child of the Border. So you don't need to set the BorderBrush and BorderThickness of the Button. Also, you don't need to change the style.

The reason for this behavior is that when your pointer moves over the button, it triggers the PointerOver state of the button which will change the BorderBrush and the border will change.
To change this behavior, what you need is to find out the style of the button and disable the BorderBrush change in VisualStates like PointerOver or Pressed, etc.
Here are the steps that you could follow:
You need to get button style first. There are two ways to do it.
A. Get the default style of Button control from generic.xaml file and apply the style to your Button control.
B. open the Document Outline Window in your VS and find the target button control. Right-click on the button, go to Edit Template -> Edit a copy. Then the VS will create a default style of the button automatically.
Find the PointerOver, Pressed, Disabled VisualStates in the added style, and remove the ObjectAnimationUsingKeyFrames that targets the BorderBrush.

As can be seen, I have specifically set the height of button and width equal to the image, however in xaml it doesn't wrap the image properly and shows more width and height. What is going on?

<Button> have an extra Margin that is not part of the Properties you can edit in the Properties box. However, you can edit it by editing the template for it.
Document Online -> Select Button -> Edit Template -> Edit A Copy

In your XAML code In the Pressed State you are trying to modify a target called Border. The problem is that in your grid there is no such element. There is not border added to the grid nor there is a property called border available for a grid. And when you go to edit current template, it only shows a grid. There are nothing inside the grid. My advice is to discard the current style and create a new one. No need to mess with XAML because you can easily get this done using Blend for VS.

As you can see <VisualState x:Name="Pressed"> i want that the brush background will be the original image with a little opacity, that it will be to all the buttons that i want.
Only change your VisualState "Pressed":
